The Pink Oyster (Pleurotus djamor) is a tropical mushroom that prefers warmer temperatures combined with high humidity. When young they are bright pink, getting slightly paler as they mature. Growing conditions will determine whether the mushrooms produced are thin and delicate or more substantial and meaty.

This is a very rich and versatile mushroom that can be eaten in a variety of ways. Try them in stir-fries, stews, pastas, soups and risottos or just enjoy them sauteed. They have a delicious meaty, umami flavour with a chewy texture. It is also important to remember that oyster mushrooms are delicate and have a short shelf life so they should be cooked soon after harvesting.
