Its lovely robust texture, delicious mild flavour, and longer shelf life make it well worth the effort. Overview
The King Oyster (Pleurotus eryngii) is a large, heavy mushroom with a substantial stem that is the star of the show. Their meaty texture is sometimes compared to abalone or scallops.
Unlike other oyster mushrooms, King Oysters have a long shelf life and can be kept in the fridge for up to two weeks after harvesting, especially if wrapped in tin foil.
With a mild flavour that is well suited to seasoning, this mushroom is very popular in the culinary world.
