The Golden Oyster (Pleurotus citrinopileatus) is a beautiful sub-tropical mushroom that prefers warm temperatures and high humidity. When young they are bright and vibrant, and although the yellow diminishes slightly with age it does remain through to maturity. Due to their delicate nature and short shelf life, they are not cultivated commercially.
When cooked they develop a rich nutty flavor and are a winner as an appetizer (sauteed) or in stir-fries, omelets, pizzas, and more – your imagination is the only limit!
