Brown Oyster mushrooms (Pleurotus australis) fruit easily and various methods can be employed to fruit them successfully.
They are native to Australia and New Zealand but are now cultivated worldwide. While they are very similar to the Grey Oyster mushroom (Pleurotus ostreatus), they are in fact a distinct species on their own. They have a larger, more tender stem than other oysters, which means you can use the whole mushroom in your cooking. These mushrooms are as versatile as their cousins and go very well in many dishes. They are not quite as sweet as other oysters, so make for a great substitute for meat.
